
This is a quick, easy, delicious salmon recipe using orzo pasta. The recipe can be used as an entire meal feeding four.

Things You'll Need
- 4 skinless salmon fillets
- 2/3 cup orzo pasta
- 1/4 cup green onions with tops, sliced
- 1 can chopped black olives
- 1 can Italian olives
- 3 tablespoons prepared basil pesto (add more to taste)
- lemon zest to taste
- lemon juice to taste
- 4 sheets of aluminum foil

Orzo pasta resembles rice. Place pasta in pot and cover with water cooking on high. Cook until brought to a boil then reduce heat to medium, stirring occasionally. When water is almost evaporated, reduce heat to low, continuing to stir occasionally until all water is gone and pasta is soft. - 2
Chopping green onions While pasta is cooking, chop green onions and Italian olives. Combine in medium mixing bowl with can of chopped black olives and one tablespoon of pesto. - 3
Grate lemon rind over mixture creating lemon zest Place grater over mixing bowl and grate lemon rind into mixture. Squeeze lemon when done grating (be careful to remove any seeds that may fall in as well) into mixture. - 4
Blend pasta and mixture Pasta should be ready after the lemon rind is grated and the lemon is squeezed. Add cooked orzo pasta to mixture and stir until well blended. - 5
Rinse fish in cold running water Rinse salmon under cold running water and gently shake or pat dry. - 6
Salmon on top of pasta mixture topped with pesto Spread 3/4 cup pasta mixture on each piece of aluminum foil, place salmon and cover with remaining pesto fold aluminum foil around fish and mixture lightly, leaving one end open. - 7
Salmon and pesto wrapped in aluminum foil with additional pasta mixture spread around packets. Bake at 425 degrees for 13 to 15 minutes and
